Apricot Chicken with Steamed Vegetables

3-4 chicken breasts

1 medium onion, chopped

2 cloves of garlic

2 tsp of paprika

1/2 tsp of chili powder

A pinch of cumin

10 dried apricots

300ml home made chicken stock

1 tsp of mixed herbs

1 tbsp of gluten free soy sauce

1 head of broccoli

150g of green beans


5 mins preparation, 25 mins cooking. You’ll need a large pan and a steamer.

Fry the onion until soft, then add the garlic, spices, apricots, herbs, soy sauce and stock. Simmer for 2 minutes. Add the chicken and simmer for further 20 minutes. Chop the broccoli, put the vegetables in to the steamer and set it to start when the chicken has about 10 minutes of cooking left.
