1 bag Quorn™ Mince
1 garlic clove or 1tsp garlic puree
1 tin of tomatoes or 6 fresh tomatoes
200 grams fresh mushrooms
1 tbsp tomato puree
3 Bay leaves, 1tsp oregano or Italian herbs
(preferably fresh from the garden)
A splash of red wine (optional)
Chop the onion and sweat in a large pan. Add garlic, then Quorn™ mince and let it cook for about 8 minutes. Stir in the cornflour and cook for another minute. Add wine and cook for another minute or two, then add tomatoes, mushrooms and herbs, and simmer for about 20 minutes until cooked thoroughly and flavours develop. Season if required. Serve on spaghetti (gluten free spaghetti is now available in most supermarkets). Enjoy!
