The following two soup recipes are perfect for the cold winter days. Step-by-step towards a delicious tasting healthy starter or a stand alone meal. Feel free to adjust the recipes by altering the amounts of ingredients or by adding other ingredients if you like. Alternatively, why not stop by at Cameron & Swan and try the soups for yourself?
BEETROOT & GOATS CHEESE SOUP
Chop 1 large onion and sweat in 2 tbs of olive oil. Peel and dice up 500g of beetroot, and add to onions with bouillon stock. Simmer until beetroot is soft, add goats cheese and liquidise until smooth. Season to taste!
ROASTED BUTTERNUT SQUASH & GARLIC SOUP
Chop 1 large onion and sweat in 2 tbs of olive oil. Peel and dice up 1 butternut squash, put in a roasting tin with whole garlic cloves crushed with the skin on and roast for 1 hour. Take the skin off the garlic cloves and add with the squash to the onions. Add bouillon stock. Simmer for 20 minutes, then liquidise until smooth
and season to taste!
